Roast
The secret to a
good roast is cooking it until it is done and then cooking it some more
until it is melt in your mouth tender!
This is a good meal to put in the oven on Sunday before you go to
church.
Chuck, Rib, Arm, Rump Roast
Pot Roast with Potatoes & Carrots
On
top of the stove, sear both sides of your roast quickly over med-high
heat. Put 2-4 cups of
water, in roasting pan with the roast, and sprinkle with salt and pepper.
Add some onion slices, chunks of peeled raw potatoes and peeled
chunks of raw carrots (Can leave them whole).
Bake at 350 degrees in a covered roasting pan.
4 lb. roast: Bake 2-2/12
hours
5 lb. or more 3-1/2-4 hours
Can be done in the crockpot
for 5-6 hours.
To make gravy:
Add 1/4 cup flour into 3/4 c. milk and shake to make a smooth
thickening. Stir into hot
broth from meat. Cook a few
minutes until thick.
Chuck Steak or Roast with Mushroom Gravy
(this
is also good using stew meat)
Mix
together 1 can mushroom soup, 2 cups water & 1 package Lipton's dry
onion soup and pour over roast. Bake
2-2/12 hours on 350 in a covered roasting pan.

Steak
Round or Cubed Steak
Round
steak is packaged as one big steak. I cut it into serving size pieces.
Dip the raw pieces in flour and quick pan fry both sides just until
brown. Salt and pepper.
Cover with water in roasting pan
and bake 350 degrees for 1 hour.
Cubed
steak is small pieces that have been tenderized.
I dip the pieces in flour, salt & pepper and quick fry it in a
frying pan. Cover and simmer
for approximately 30 minutes. Thicken
the broth to make gravy and serve over rice or mashed potatoes.
London Broil Steak
This is a
thick cut of steak almost like a roast.
One steak will serve 4-6 people.
I do it on the grill. You
do not want to overcook. Keep
it pink or red in the center. I
like to marinate it with Italian Dressing.
Slice thin to serve.
Hint: I like to grill my steaks while they are frozen.
This makes it easier to brown the surface of the steak without
overcooking the inside.

Specialty Cuts
Liver
Dip the
raw meat in flour and pan fry with sliced onions just until brown.
Add some water and simmer on top of the stove 30 minutes.
Thicken the broth to make gravy.
I like to serve with mashed potatoes.

Stew Meat
Stew meat
needs to be well cooked or it will be tough.
I coat the pieces with flour and pan fry until brown.
Then I use them in soups or you can bake with a can of mushroom
soup and 1 cup water. Just
before serving add 1/2 cup sour cream and season with salt and pepper.
Serve over noodles.
Beef
Stew (delicious-our
favorite)
1 lb. stew meat
1 can cream of mushroom soup (condensed)
Potatoes, peeled and chunked
Green beans
Carrots, peeled and chunked
I onion, chopped
Mushrooms, chopped
2 c. chopped celery
Salt, pepper and garlic powder to season
There
is no magic amounts-depends on the size of your crock pot.
Add water to make additional broth.
Cook 4-5 hours on medium temperature.
Makes a very hearty, cold weather meal that smells scrumptious. |
Brisket
Can be done in crock pot, slow-cooker, or oven
Barbeque Sauce: Combine
following ingredients

c. Worcestershire Sauce

c. Catsup

T. Vinegar

T. Brown Sugar

tsp Dry Mustard

|

tsp. Chili Powder

tsp. Minced Garlic

T. Liquid Smoke
|
|
1/2
tsp. Celery Salt

tsp. Paprika
|

1/8
tsp Black Pepper
|

tsp. Salt

c. Chopped Onion
|
|
Pour
sauce over brisket and cook in slow cooker approx. 4 hours.
Start on high until it is bubbling and hot.
Turn down to 300 degrees or low. Cook until it is fall apart
tender.
Serving
Size:
2-3 lb. Brisket.
Personal
Note:
My
husband kept after me to do a brisket. I always thought you had to
have a smoker and it was a tedious, all-day deal and kept putting it
off. One week I was out of town and he decided to cook a
brisket. He went on the internet and found a recipe. It turned
out very good and he was very pleased with himself and I was proud of
him!!! Now we are hooked! I worked with the recipe and
changed some ingredients and added some others till I came up with one we
really like.
Just
in case you don't know what liquid smoke is....it is found in a bottle in
the seasoning/spice section of the grocery store. Comes in a bottle
and looks like Worcestershire Sauce. It is dark in color,
smells like smoke and gives a tasty smoked flavor without the work. |
